Make the best breakfast potatoes with this easy oven-roasted recipe. These potatoes achieve a golden, crispy exterior and a fluffy interior every time, perfect for any morning meal or brunch side dish.

  • 2 lbs Yukon Gold or Russet potatoes, scrubbed and diced into 1-inch cubes
  • 3 tablespoons avocado oil or olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for a little heat)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. Place the diced potatoes in a large bowl. If you want extra crispy potatoes, soak the diced potatoes in cold water for 30 minutes, then drain them completely and pat them very dry with paper towels. This step removes surface starch, which helps them crisp.
  3. Drizzle the potatoes with the avocado oil. Toss well to coat every piece evenly.
  4. In a small bowl, mix together the salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using). Sprinkle this seasoning mix over the oiled potatoes and toss again until the seasoning is distributed.
  5. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary. Crowding leads to steaming, not crisping.
  6. Roast for 20 minutes. Remove the pan from the oven and carefully flip or toss the potatoes using a spatula.
  7. Return the pan to the oven and roast for another 15 to 20 minutes, or until the potatoes are deeply golden brown and crispy on the edges.
  8. Serve immediately as a delicious side dish for eggs or bacon, or as part of your weekend brunch spread.
