  • 3/4 cup creamy peanut butter
  • 3 cups crispy rice cereal
  • 1 1/2 cups miniature marshmallows

Instructions

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a large microwave-safe bowl, combine the white chocolate chips and peanut butter. Microwave in 30-second intervals, stirring well after each interval, until the mixture is completely smooth and melted.
  3. In a separate large bowl, combine the crispy rice cereal and miniature marshmallows.
  4. Pour the melted white chocolate and peanut butter mixture over the cereal and marshmallow mixture. Use a spatula to gently fold everything together until all the dry ingredients are evenly coated. Work quickly, as the mixture will start to set.
  5. Drop rounded spoonfuls of the mixture onto the prepared parchment-lined baking sheet. You can use a cookie scoop for uniform size.
