Make this creamy whipped ricotta dip for an elegant appetizer that comes together in minutes. The combination of light, fluffy cheese with sweet and spicy hot honey and crunchy walnuts creates a satisfying, crowd-pleasing snack perfect for any gathering.

Ingredients

  • 15 ounces whole milk ricotta cheese, drained if watery
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup honey (use hot honey for spice)
  • 1/4 cup chopped walnuts, toasted
  • Fresh thyme leaves, for garnish
  • Crusty bread, crostini, or fresh vegetables, for serving

Instructions

  1. Drain the ricotta cheese for at least 15 minutes if it seems very wet. Place the drained ricotta, olive oil, salt, and pepper into a food processor.
  2. Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth, light, and fluffy.
  3. Transfer the whipped ricotta dip to a shallow serving bowl. Use the back of a spoon to create swirls on the surface.
  4. Drizzle the honey evenly over the top of the dip.
  5. Sprinkle the toasted walnuts and fresh thyme leaves over the honey.
  6. Serve the easy appetizer dip immediately with your choice of bread or vegetables.

Notes

  • To toast walnuts, place them in a dry skillet over medium heat for 3 to 5 minutes, stirring often until fragrant. Watch them closely to prevent burning.
  • If you do not have a food processor, you can use a stand mixer with the whisk attachment, but whip for longer until very smooth.
  • For a holiday cheese spread variation, substitute the hot honey with a drizzle of balsamic glaze and top with dried cranberries instead of walnuts.
