8 ounces block feta cheese, drained
4 ounces cream cheese, softened
1/4 cup plain Greek yogurt
2 tablespoons olive oil
1 clove garlic, minced
1/4 teaspoon black pepper
4 slices bacon, cooked until crisp and crumbled
6 Medjool dates, pitted and finely chopped
1 tablespoon hot water (for date drizzle)
Instructions
Cook the bacon in a skillet until fully crisp. Remove bacon and set aside on a paper towel to drain. Reserve 1 tablespoon of the rendered bacon fat if desired for flavor, otherwise discard.
In a food processor, combine the drained feta cheese, softened cream cheese, Greek yogurt, olive oil, minced garlic, and black pepper.
Process the mixture until completely smooth and creamy. Stop and scrape down the sides as needed. Continue processing for 2 to 3 minutes to achieve a light, whipped texture.
Transfer the whipped feta dip to a shallow serving bowl.
In a small bowl, combine the finely chopped dates with 1 tablespoon of hot water. Mash lightly with a fork to create a thick, slightly sticky drizzle.
Top the whipped feta with the crumbled crispy bacon. Drizzle the date mixture evenly over the top of the dip.
Serve immediately with crackers, pita bread, or fresh vegetable sticks.
Notes
For a make ahead party dip, prepare the whipped feta base up to 2 days ahead and store it covered in the refrigerator. Add the bacon and date topping just before serving.
If you prefer a less salty dip, soak the feta block in cold water for 30 minutes before draining and using.
Serve this gourmet snack dip slightly chilled or at room temperature.
