Make this refreshing, easy Watermelon Mint Mojito. It is a perfect summer cocktail using fresh fruit and mint.

Ingredients

  • 2 cups fresh seedless watermelon, cubed
  • 10 fresh mint leaves
  • 1 lime, cut into wedges
  • 2 ounces white rum (optional)
  • 1 ounce fresh lime juice
  • 1/2 ounce simple syrup (or to taste)
  • Club soda or sparkling water, to top
  • Ice cubes

Instructions

  1. Place the cubed watermelon and mint leaves into a sturdy highball or cocktail glass.
  2. Add the lime wedges and simple syrup to the glass.
  3. Muddle the ingredients gently. Press down on the watermelon and lime to release juice and oils from the mint without shredding the leaves.
  4. Add the white rum, if using, and the fresh lime juice to the glass. Stir briefly.
  5. Fill the glass completely with ice cubes.
  6. Top the mixture with club soda or sparkling water.
  7. Stir gently from the bottom up to combine the ingredients without losing carbonation.
  8. Garnish with a small watermelon wedge and a fresh mint sprig.

Notes

  • For a non-alcoholic watermelon cooler, omit the rum and increase the club soda slightly.
  • To make a large batch, blend the watermelon and strain the juice before mixing with other ingredients. Adjust sweetness based on the watermelon’s ripeness.
