  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 very ripe, mashed bananas (about 1 1/2 cups)
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/3 cup neutral oil (like canola or vegetable)
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1/2 cup vegan chocolate chips or chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking soda, cinnamon, and salt. This is your dry mixture.
  3. In a separate, smaller bowl, mash the ripe bananas until mostly smooth.
  4. Add the granulated sugar, brown sugar, oil, almond milk, vanilla extract, and apple cider vinegar to the mashed bananas. Whisk until just combined.
  5. Pour the wet ingredients into the dry ingredients. Use a spatula to mix until just combined. Do not overmix; a few streaks of flour are acceptable.
  6. If using, gently fold in the chocolate chips or walnuts.
  7. Pour the batter into your prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.
