Make this crunchy, sweet and salty toffee Chex mix. It features a rich, buttery toffee coating over cereal, pecans, and pretzels, making it an addictive homemade snack perfect for parties or holidays.

  • 12 cups Chex cereal (mixture of Rice and Corn recommended)
  • 1 cup pretzel twists
  • 1 cup pecan halves
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 250 degrees F. Line two large baking sheets with parchment paper.
  2. In a large bowl, combine the Chex cereal, pretzels, and pecans. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the mixture reaches a full rolling boil. Boil for exactly one minute without stirring.
  4. Remove the saucepan from the heat immediately. Stir in the vanilla extract and baking soda quickly; the mixture will foam up.
  5. Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently stir with a large rubber spatula until all the cereal pieces are lightly coated.
  6. Spread the coated cereal mixture in a single layer onto the prepared baking sheets.
  7. Bake for 30 minutes, stirring the mixture every 10 minutes to prevent burning and promote even crisping.
  8. Remove from the oven and immediately sprinkle the chocolate chips over the warm mix. Let it sit for 5 minutes to soften the chips. Gently stir until the chocolate is melted and distributed.
  9. Spread the mix back onto the baking sheets to cool completely. Break apart any large clumps once cool.
  10. Place the cooled toffee Chex mix into a large zip-top bag. Add the powdered sugar and shake well until the mix is lightly coated. Store in an airtight container.

Notes

  • For a variation, substitute some of the cereal with bagel chips or mixed nuts to create a more complex texture.
  • If you prefer a less sweet coating, reduce the brown sugar to 3/4 cup, but maintain the one-minute boil time for proper texture.
  • This sweet and crunchy dessert is best eaten within one week for maximum crispness.
