Create an elegant, sweet and savory appetizer using Medjool dates stuffed with creamy goat cheese, wrapped in bacon, and finished with a simple honey-pecan glaze. These roasted stuffed dates are simple to make and perfect for holiday parties or entertaining.

  • 24 large Medjool dates
  • 4 ounces soft goat cheese, room temperature
  • 1/4 cup chopped pecans or walnuts
  • 1/2 teaspoon orange zest (optional, for brightness)
  • 12 thin slices bacon, halved crosswise
  • 2 tablespoons honey
  • Pinch of salt

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Prepare the dates: Carefully slice each date lengthwise down one side and remove the pit.
  3. Mix the filling: In a small bowl, combine the softened goat cheese, chopped nuts, and orange zest, if using. Mix until just combined.
  4. Stuff the dates: Spoon about 1/2 teaspoon of the goat cheese mixture into the cavity of each date. Press the date closed slightly around the filling.
  5. Wrap with bacon: Take one half-slice of bacon and wrap it around the center of each stuffed date, securing the filling. You may need a toothpick to hold the bacon in place if it does not stay wrapped.
  6. Arrange the dates on the prepared baking sheet.
  7. Bake for 15 to 20 minutes, or until the bacon is crisp and the dates are slightly caramelized.
  8. Prepare the glaze: While the dates bake, gently warm the honey in a small saucepan or microwave until it is runny.
  9. Remove the dates from the oven. Drizzle the warm honey evenly over the dates. Sprinkle with a tiny pinch of salt.
  10. Serve warm or at room temperature as an elegant finger food.

Notes

  • For a quicker version, skip the bacon and simply stuff the dates with goat cheese and top with the honey-nut mixture after roasting.
  • If you prefer a less sweet bite, use Boursin or cream cheese instead of goat cheese.
  • If you do not want to roast, you can make these no-bake by stuffing the dates and chilling them until firm, then drizzling with honey.
  • Use high-quality Medjool dates for the best texture and natural sweetness.
