Ingredients
Scale
2 cups fresh strawberries, sliced
1/4 cup granulated sugar
1 tablespoon lemon juice
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
1 cup crumbled pound cake or shortbread cookies
Instructions
Combine the sliced strawberries, granulated sugar, and lemon juice in a bowl. Gently stir and let the mixture sit for 15 minutes to macerate.
While the strawberries macerate, prepare the whipped cream. In a separate bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Take four individual serving glasses or jars. Place a layer of crumbled pound cake or cookies at the bottom of each glass.
Spoon a layer of the macerated strawberries over the cake layer.
Top the strawberries with a generous layer of the prepared whipped cream.
Repeat the layers: cake crumbs, strawberries, and finish with a final dollop of whipped cream on top of each parfait.
Serve immediately or chill for up to 2 hours before serving.
Notes
For a make ahead strawberry dessert, prepare the strawberries and whipped cream separately and store them in the refrigerator. Assemble the parfaits just before serving to keep the cake crumbs from getting too soft.
You can substitute store bought pound cake or graham crackers for the shortcake element to make this a truly quick strawberry pudding dessert.
This recipe makes a great summer strawberry treat when berries are at their peak.
