2 cups fresh or frozen English peas, shelled
1 cup spring greens mix
4 ounces feta cheese, crumbled
1/4 cup fresh mint leaves, chopped
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
If using frozen peas, thaw them under cold running water or blanch them briefly in boiling water for 1 minute, then immediately transfer to ice water to stop cooking. Drain well.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
In a medium bowl, combine the thawed peas, spring greens mix, and chopped fresh mint.
Pour the dressing over the pea and greens mixture. Toss gently to coat all ingredients.
Gently fold in the crumbled feta cheese.
Serve this healthy side dish immediately.
Notes
For a richer flavor, use high-quality extra virgin olive oil.
You can substitute baby spinach for the spring greens mix if desired.
