Make this easy, creamy Slow Cooker Buffalo Chicken Chili for a comforting, spicy meal perfect for game day or weeknight dinners. Shredded chicken simmers with bold buffalo flavor.

  • 2 lbs boneless, skinless chicken breasts
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (10 ounce) can mild diced green chilies, undrained
  • 1 cup chicken broth
  • 1 cup Buffalo wing sauce (your preferred heat level)
  • 1 (8 ounce) package cream cheese, cubed
  • 1 teaspoon ranch seasoning mix
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Pour the black beans, kidney beans, Rotel, green chilies, chicken broth, Buffalo wing sauce, ranch seasoning, garlic powder, and onion powder over the chicken.
  3. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  4. Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
  5. Add the cubed cream cheese to the chili. Stir until the cream cheese is completely melted and the chili is creamy.
  6. Stir well to combine all ingredients. Let it cook for another 15 minutes on LOW if needed to fully incorporate the cheese.
  7. Serve hot with your favorite toppings.

Notes

  • For a thicker chili, remove about 1 cup of the liquid before adding the cream cheese, mix with 1 tablespoon of cornstarch, and stir back into the chili before the final 15 minutes of cooking.
  • Serve this spicy comfort food topped with shredded cheddar cheese, a dollop of sour cream or Greek yogurt, and chopped green onions.
  • This recipe works well for crockpot meal prep; leftovers store well in the refrigerator for up to 4 days.
