  • 1 pound breakfast sausage (mild or spicy)
  • 8 ounces cream cheese, softened
  • 1 can (10 ounces) Rotel Diced Tomatoes and Green Chilies, drained well
  • 2 cups shredded sharp cheddar cheese
  • 1 1/2 cups Bisquick or baking mix

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper.
  2. In a large bowl, combine the breakfast sausage, softened cream cheese, drained Rotel, and shredded cheddar cheese. Mix these ingredients thoroughly until they are fully incorporated.
  3. Add the Bisquick or baking mix to the sausage mixture. Use your hands to mix until the dry ingredients are just combined. Do not overmix, as this can make the balls dry.
  4. Scoop the mixture and roll it into balls about 1 inch in diameter. Place the balls on the prepared baking sheet, leaving about 1 inch between them.
  5. Bake for 18 to 20 minutes, or until the sausage balls are golden brown and cooked through.
  6. Remove from the oven and let them cool slightly on the baking sheet before serving warm.

Notes

  • Drain the Rotel very well; excess liquid prevents the sausage balls from holding their shape.
  • For make-ahead preparation, you can assemble the balls, place them on a baking sheet, and freeze them unbaked. Bake directly from frozen, adding 5 to 7 minutes to the baking time.
  • If you prefer a less spicy flavor, use mild Rotel and mild breakfast sausage.
  • These sausage balls are excellent served with a side of ranch or honey mustard dipping sauce.
