1.5 lbs sirloin steak, cut into 1-inch cubes
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh parsley, chopped
Instructions
Pat the steak cubes dry with paper towels. In a bowl, toss the steak with salt, pepper, garlic powder, and paprika until evenly coated.
Heat the olive oil in a large cast-iron skillet over medium-high heat until shimmering.
Add half of the seasoned steak cubes to the hot skillet in a single layer. Do not overcrowd the pan. Sear for 2 to 3 minutes per side until a brown crust forms. Remove the first batch of steak to a clean plate.
Repeat the searing process with the remaining steak cubes. Remove them to the plate with the first batch.
Reduce the heat to medium-low. Add the butter to the skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Return all the steak bites to the skillet. Toss quickly to coat the steak in the garlic butter sauce. Cook for 1 minute more, stirring constantly.
Remove the skillet from the heat. Stir in the fresh parsley. Serve the steak bites immediately.
Notes
For extra tender steak bites, let the seasoned steak rest at room temperature for 15 minutes before searing.
You can serve these steak bites over mashed potatoes or with roasted potatoes for a complete meal.
If you prefer a richer sauce, add 1 tablespoon of Worcestershire sauce to the melted butter before adding the steak back in.
