  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 1 cup chopped celery
  • 1/2 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the rinsed and drained cannellini beans in a medium mixing bowl.
  2. Add the chopped red onion, celery, and fresh parsley to the bowl with the beans.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to create the dressing.
  4. Pour the dressing over the bean mixture.
  5. Gently toss all ingredients together until everything is evenly coated.
  6. Serve immediately, or chill for 15 minutes to allow the flavors to meld.
