  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.
  2. Prepare the topping: In a medium bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Cut in the cold butter pieces using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Spread the topping mixture evenly into the prepared baking dish. Sprinkle the toasted pecans over the topping layer.
  4. Prepare the filling: In a separate bowl, whisk together the boiling water and 1 cup sugar until the sugar dissolves.
  5. Whisk in the melted butter, corn syrup (or maple syrup), eggs, and vanilla extract until combined.
  6. Carefully pour the liquid filling mixture over the pecan and crumb topping layer. Do not stir.
  7. Bake for 40 to 45 minutes, or until the topping is golden brown and the filling is bubbly and set.
  8. Let the cobbler cool slightly before serving warm.
