Make these easy, bite-sized pecan pie balls without turning on your oven. They capture the classic sweet, nutty flavor of pecan pie in a simple, portion-controlled treat perfect for holidays or parties.

  • 1 cup graham cracker crumbs
  • 1/2 cup powdered sugar
  • 1/2 cup light corn syrup
  • 1/4 cup packed light brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (for dipping)
  • 1 tablespoon coconut oil (optional, for dipping)

Instructions

  1. Place the chopped pecans, graham cracker crumbs, and powdered sugar in a medium bowl. Mix them together until combined.
  2. In a separate small bowl, whisk together the corn syrup, brown sugar, melted butter, vanilla extract, and salt until smooth.
  3. Pour the wet mixture over the dry ingredients. Stir well until a thick, uniform dough forms.
  4. Chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
  5. Scoop the chilled dough using a small cookie scoop or roll it into small, one-inch balls. Place the balls on a parchment-lined baking sheet.
  6. Return the baking sheet to the refrigerator or freezer for another 15 minutes to firm up the balls.
  7. Prepare the chocolate coating: Place the chocolate chips and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is smooth and fully melted.
  8. Dip the bottom half or completely coat each chilled ball in the melted chocolate using a fork or toothpick.
  9. Place the dipped balls back onto the parchment-lined sheet.
  10. Refrigerate the finished pecan pie balls for at least 1 hour, or until the chocolate is set.

Notes

  • You can substitute vanilla wafers for graham crackers if you prefer a different base flavor.
  • For a Southern pecan treats flavor, add 1/4 teaspoon of bourbon extract to the wet ingredients.
  • These make-ahead dessert balls store well in an airtight container in the refrigerator for up to two weeks.
