Make a rustic, crusty loaf of homemade artisan bread flavored deeply with fresh garlic and sharp Parmesan cheese. This recipe uses a simple no-knead method for an open, chewy interior.

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon instant yeast
  • 1 1/4 cups cool water
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 4 cloves garlic, minced finely
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, whisk together the flour, salt, and instant yeast.
  2. Add the cool water to the dry ingredients. Mix with a wooden spoon until just combined into a shaggy dough. Do not overmix.
  3. Cover the bowl tightly with plastic wrap and let it rest at room temperature for 12 to 18 hours. This is the long fermentation step.
  4. After the long rest, gently scrape the dough onto a lightly floured surface. Sprinkle the minced garlic and 1/2 cup of Parmesan cheese over the dough. Gently fold the dough over itself a few times to incorporate the cheese and garlic without fully kneading.
  5. Shape the dough into a rough ball. Lightly oil the bowl you used before, place the dough back in, and cover it again. Let it rest for 30 minutes.
  6. While the dough rests, place a Dutch oven with its lid inside your oven. Preheat the oven to 450 degrees Fahrenheit (232 degrees Celsius).
  7. Once preheated, carefully remove the hot Dutch oven. Gently lift the dough and place it inside the Dutch oven. Drizzle the top with olive oil and sprinkle with extra Parmesan cheese.
  8. Cover the Dutch oven and bake for 30 minutes.
  9. Remove the lid and continue baking for another 15 to 20 minutes, or until the crust is deep golden brown and firm.
  10. Carefully remove the bread from the Dutch oven and let it cool completely on a wire rack before slicing to achieve the best chewy texture.

  • For a stronger garlic flavor, roast the garlic cloves before mincing and adding them to the dough.
