Follow these simple steps to make moist, flavorful baked salmon with a crispy, golden parmesan topping. This is a quick, healthy weeknight dinner idea.

Ingredients

Scale
  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons panko breadcrumbs
  • 1 clove garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper for easy cleanup.
  2. Place the salmon fillets on the prepared baking sheet. Brush the tops lightly with olive oil.
  3. In a small bowl, combine the grated Parmesan cheese, panko breadcrumbs, minced garlic, Italian seasoning, salt, and pepper. Mix well until the ingredients are evenly distributed. This creates your crispy salmon topping.
  4. Spoon the Parmesan mixture evenly over the top of each salmon fillet, pressing gently so the crust adheres to the fish.
  5. Bake for 12 to 15 minutes, depending on the thickness of your fillets. The salmon is done when it flakes easily with a fork and the internal temperature reaches 145 degrees Fahrenheit. The crust should be golden brown.
  6. Remove from the oven and immediately drizzle each fillet with fresh lemon juice.
  7. Serve this lemon parmesan salmon immediately as a low carb fish dinner.

Notes

  • For a stronger flavor, add 1 teaspoon of lemon zest to the Parmesan mixture.
  • If your crust browns too quickly before the salmon is cooked, loosely tent the fillets with aluminum foil for the remainder of the baking time.
  • This recipe pairs well with roasted asparagus or a simple side of quinoa for a family friendly fish meal.
  • To ensure moist baked salmon, do not overcook; check for doneness at the 12-minute mark.
