Make this rich, comforting chicken pasta in one pot for minimal cleanup. This recipe delivers a creamy garlic butter sauce that tastes indulgent but is simple enough for a weeknight meal.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 1 pound pasta (penne or rotini work well)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 4 tablespoons unsalted butter
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Season the cut chicken pieces with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Do not let it burn.
  4. Add the dry pasta and chicken broth to the skillet. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for about 10 to 12 minutes, stirring occasionally, until the pasta is nearly tender and most of the liquid is absorbed.
  5. Stir in the heavy cream, butter, and grated Parmesan cheese. Continue to cook, stirring constantly, until the sauce thickens slightly and becomes creamy, about 2 to 3 minutes.
  6. Return the cooked chicken to the skillet and stir to coat everything in the sauce. Heat through for 1 minute.
  7. Remove the skillet from the heat. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving immediately.

Notes

  • For a richer flavor, substitute half of the chicken broth with dry white wine and let it reduce slightly before adding the rest of the broth.
  • If you prefer a slightly spicy dish, add 1/2 teaspoon of red pepper flakes with the garlic.
