  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup reserved pasta water
  • 8 ounces penne or rigatoni pasta
  • 2 cups fresh spinach
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Season the chicken pieces with salt, pepper, Italian seasoning, and garlic powder.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium. Add the chopped sun-dried tomatoes and minced garlic to the skillet. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  5. Add the dry pasta and heavy cream to the skillet. Stir well to combine. Bring the mixture to a gentle simmer, then reduce the heat to medium-low, cover, and cook for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is nearly tender.
  6. Stir in the reserved pasta water, Parmesan cheese, and red pepper flakes if using. Continue to stir until the sauce thickens slightly.
  7. Return the cooked chicken to the skillet. Add the fresh spinach and stir until the spinach wilts into the sauce, about 1 minute.
  8. Taste the sauce and adjust seasoning if needed. Serve immediately with extra grated Parmesan cheese on top.
