1 cup shelled frozen edamame, thawed
1/4 cup grated Parmesan cheese
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 clove garlic, minced
2 tablespoons olive oil
1 tablespoon water (or more, for thinning)
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Place the thawed edamame, Parmesan cheese, lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper into a food processor.
Pulse the ingredients several times until coarsely chopped.
Process continuously, scraping down the sides as needed, until the mixture is mostly smooth.
Add 1 tablespoon of water and process until you reach your desired purée consistency. Add more water, one teaspoon at a time, if you prefer a thinner dip.
Taste the purée and adjust salt or lemon juice if necessary.
Transfer the lemon parmesan edamame purée to a serving bowl. Serve immediately or chill for later use.

For a creamier texture, use a high-speed blender instead of a food processor.
