Make this bright, savory lemon parmesan edamame purée. It is a quick, healthy green dip perfect for entertaining or as a simple side dish.

Ingredients

  • 1 cup shelled frozen edamame, thawed
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon water (or more, for thinning)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Place the thawed edamame, Parmesan cheese, lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper into a food processor.
  2. Pulse the ingredients several times until coarsely chopped.
  3. Process continuously, scraping down the sides as needed, until the mixture is mostly smooth.
  4. Add 1 tablespoon of water and process until you reach your desired purée consistency. Add more water, one teaspoon at a time, if you prefer a thinner dip.
  5. Taste the purée and adjust salt or lemon juice if necessary.
  6. Transfer the lemon parmesan edamame purée to a serving bowl. Serve immediately or chill for later use.

  • For a creamier texture, use a high-speed blender instead of a food processor.
