  • 1 pound salmon fillet, skin removed, cut into 1-inch cubes
  • 1 tablespoon avocado oil
  • 1 cup uncooked white rice (sushi or jasmine)
  • 1 cup water (for rice)
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoons honey
  • 1 tablespoon sriracha (adjust to your heat preference)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 ripe avocado, sliced
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Cook the rice according to package directions using 1 cup of water. Set aside and keep warm.
  2. While the rice cooks, prepare the honey glaze: In a small bowl, whisk together the soy sauce, honey, sriracha, ginger, and minced garlic.
  3. Heat the avocado oil in a large skillet over medium-high heat. Add the salmon cubes and cook for 2-3 minutes per side until lightly browned.
  4. Pour the prepared honey glaze over the salmon in the skillet. Cook for 1-2 minutes, stirring gently, until the sauce thickens slightly and coats the salmon pieces evenly. Remove from heat.
  5. Assemble your salmon bowls: Divide the cooked rice among four bowls.
  6. Top the rice with the honey glazed salmon, shredded carrots, sliced cucumber, and avocado slices.
  7. Sprinkle the bowls with sesame seeds before serving immediately.

  • For a gluten-free option, substitute the soy sauce with tamari or coconut aminos in the glaze.
