Make this classic, hearty old fashioned hamburger soup for a satisfying, budget-friendly family dinner. This one pot hamburger soup is packed with ground beef and vegetables in a savory beef broth.

Ingredients

Scale
  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cups beef broth (savory beef broth soup base)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 medium potatoes, peeled and cubed (potato hamburger soup)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup egg noodles (optional, for a heartier meal)
  • 1 tablespoon olive oil or cooking oil

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned. Drain off any excess grease.
  2. Add the chopped onion, carrots, and celery to the pot with the beef. Cook until the vegetables begin to soften, about 5 to 7 minutes.
  3. Pour in the beef broth and add the diced tomatoes (with their juice). Stir in the cubed potatoes, oregano, basil, garlic powder, salt, and pepper. This creates the savory beef broth soup base.
  4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the potatoes are tender.
  5. If using, stir in the egg noodles during the last 5 minutes of cooking, or until they are cooked through.
  6. Taste and adjust seasonings if needed. Serve this easy ground beef soup hot.
  7. For slow cooker preparation: Brown the beef and sauté the vegetables separately. Transfer all ingredients (except noodles) to the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Add noodles during the last 30 minutes of cooking if desired.

Notes

  • For a creamy hamburger soup variation, stir in 1/2 cup of heavy cream or evaporated milk during the last 5 minutes of simmering.
  • This recipe works well for meal prep and is a budget friendly soup option.
  • Serve this comfort food soup with crusty bread for dipping.
