Make juicy, flavorful chicken skewers coated in garlic and Parmesan cheese. This easy recipe works well for grilling, baking, or air frying for a simple weeknight dinner.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes if grilling)

Instructions

  1. In a medium bowl, whisk together the olive oil, minced garlic, Italian seasoning, salt, and pepper.
  2. Add the cubed chicken to the bowl and toss to coat evenly with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the chicken to absorb the flavor.
  3. Preheat your grill to medium heat (about 375°F), or preheat your oven to 400°F (200°C) if baking, or preheat your air fryer to 380°F (195°C).
  4. Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
  5. If grilling: Place the skewers on the oiled grill grates. Grill for 12-15 minutes, turning every 3-4 minutes, until the chicken is cooked through (internal temperature reaches 165°F).
  6. If baking: Arrange the skewers on a baking sheet lined with parchment paper. Bake for 18-22 minutes, flipping halfway through, until cooked through.
  7. If air frying: Place the skewers in the air fryer basket in a single layer, working in batches if necessary. Air fry for 10-12 minutes, flipping halfway through, until cooked through.
  8. In the last 2 minutes of cooking (for any method), sprinkle the grated Parmesan cheese evenly over the tops of the skewers. Continue cooking until the cheese is melted and lightly golden.
  9. Remove the skewers from the heat. Garnish immediately with fresh chopped parsley before serving.

Notes

  • For extra tender chicken, you can pound the chicken breasts slightly before cubing them to ensure uniform thickness.
  • If you prefer a crispier Parmesan crust, you can toss the chicken with half the Parmesan before cooking, and then sprinkle the remaining half on during the last few minutes of cooking.
  • Serve these flavorful chicken on a stick over rice or alongside a fresh green salad for a complete meal.
