  • 1/2 cup hot water
  • 1/2 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Place the pitted Medjool dates and hot water in a food processor or high-speed blender. Process until you create a smooth, thick date paste. Scrape down the sides as needed.
  3. Add the melted coconut oil and vanilla extract to the date paste. Pulse until just combined.
  4. In a separate bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.
  5. Add the dry ingredients to the wet mixture in the food processor. Pulse until the batter is just combined and uniform. Do not overmix.
  6. Spread the batter evenly into the prepared baking pan. The batter will be thick.
  7. Bake for 20 to 25 minutes. The edges should look set, but the center should remain slightly soft for a fudgy texture.
  8. Let the brownies cool completely in the pan on a wire rack before slicing. Cooling helps them set properly.
  9. Lift the brownies out using the parchment paper overhang and cut into squares.

Notes

  • For an extra rich flavor, add 1/4 cup of dark chocolate chips to the batter before baking.
  • If you do not have Medjool dates, you can use standard pitted dates, but you may need to soak them in warm water for 10 minutes before blending to ensure a smooth paste.
