Make this classic, cheesy Velveeta and Rotel Dip on the stovetop or in a slow cooker. It is a simple, crowd-pleasing appetizer perfect for parties and game days.

  • 1 pound ground beef or sausage
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (16 ounce) package Velveeta cheese, cut into cubes
  • 1 tablespoon taco seasoning (optional)

Instructions

  1. If using meat, brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess grease.
  2. Stir the taco seasoning into the cooked meat, if using.
  3. Add the Rotel tomatoes (with their liquid) and the cubed Velveeta cheese to the skillet with the meat.
  4. Cook over low heat, stirring frequently, until the Velveeta is completely melted and the dip is smooth and creamy. This usually takes about 10 to 15 minutes.
  5. To serve in a slow cooker, transfer the mixture to a small slow cooker and keep on the ‘Warm’ setting for serving.
  6. Serve hot with tortilla chips, crackers, or vegetable sticks.

Notes

  • For a creamier dip, substitute half of the Velveeta with 8 ounces of softened cream cheese.
  • If you prefer a less spicy dip, use the mild version of Rotel tomatoes.
  • You can prepare the meat ahead of time and store it in the refrigerator for up to two days before assembling the dip.
