Make mornings simple with this ultimate cheesy egg bake casserole. This recipe is perfect for feeding a crowd, works well for meal prep, and delivers a fluffy, satisfying breakfast every time.

  • 12 large eggs
  • 1 cup milk or half-and-half
  • 1 cup cottage cheese (optional, for extra protein and fluffiness)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 1 cup cooked, crumbled breakfast sausage or diced ham
  • 1 cup fresh spinach, chopped
  • 1 cup sliced mushrooms

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the eggs, milk, cottage cheese (if using), salt, pepper, garlic powder, and onion powder until well combined and slightly frothy. This creates the base for your fluffy egg casserole.
  3. Stir in 3/4 cup of the cheddar cheese, the Monterey Jack cheese, cooked sausage or ham, spinach, and mushrooms into the egg mixture.
  4. Pour the entire mixture evenly into the prepared baking dish.
  5. Sprinkle the remaining 1/4 cup of cheddar cheese over the top.
  6. Bake for 35 to 45 minutes, or until the center is set and a knife inserted near the middle comes out clean. The top should be lightly golden brown.
  7. Let the egg bake rest for 5 minutes before slicing and serving. This is a great make-ahead breakfast; cover and refrigerate unbaked, then add 10-15 minutes to the baking time if baking cold.

  • For a hash brown egg casserole variation, layer 3 cups of frozen, thawed, and patted-dry hash browns on the bottom of the dish before adding the egg mixture.
  • You can prepare this entire savory egg casserole the night before. Cover it tightly with foil and refrigerate. In the morning, let it sit on the counter for 20 minutes while the oven preheats, then bake as directed, checking for doneness around the 40-minute mark.
