Make this quick and creamy garlic aioli at home in 5 minutes. It is a versatile condiment perfect for dipping fries, spreading on burgers, or serving with seafood.

Ingredients

  • 1 cup good quality mayonnaise
  • 4 large cloves fresh garlic, minced very fine or grated
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (optional, for richness)

Instructions

  1. Peel and mince or grate the fresh garlic cloves. You want the garlic very fine to avoid large chunks.
  2. In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and pepper.
  3. If using, whisk in the olive oil for extra richness.
  4. Stir all ingredients together until completely smooth and uniform.
  5. Taste the aioli and adjust salt or lemon juice as needed for your preference.
  6. For the best flavor, cover the aioli and let it rest in the refrigerator for at least 15 minutes before serving. This allows the garlic flavor to fully infuse the mayonnaise.

Notes

  • For a classic, from-scratch aioli (not the 5-minute version), you must slowly emulsify one egg yolk with garlic paste before drizzling in 1 cup of neutral oil drop by drop.
  • If you prefer a bolder garlic flavor, let the minced garlic sit in the lemon juice for 5 minutes before mixing it into the mayonnaise.
  • This sauce works well as a sandwich spread, a dip for roasted vegetables, or a topping for grilled chicken.
