Make simple, high-protein egg bites using cottage cheese for a fluffy texture. These are perfect for meal prep, grab-and-go breakfasts, and taste better than commercial versions.

  • 1 cup cottage cheese (2% or full fat)
  • 6 large eggs
  • 1/2 cup shredded cheese (Monterey Jack or cheddar blend)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cooked, crumbled bacon or diced ham (optional)
  • 1/4 cup finely chopped spinach (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin or use silicone liners.
  2. In a blender, combine the cottage cheese, eggs, salt, and pepper. Blend until the mixture is completely smooth and creamy. This step creates the fluffy texture.
  3. If using mix-ins, stir the shredded cheese, bacon/ham, and spinach into the blended egg mixture. Do not overmix.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean.
  6. Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
  7. Serve warm or cool completely for meal prepping.

Notes

  • For an Instant Pot method, blend the mixture, pour into silicone egg molds, and cook on high pressure with 1 cup of water in the pot using a trivet for 8 minutes, followed by a 5-minute natural pressure release.
  • These egg bites freeze well. Store cooled bites in an airtight container in the freezer for up to one month. Reheat in the microwave for 30 to 60 seconds.
  • Use low carb breakfast bites by omitting any processed meats and sticking to eggs and vegetables.
