Easy Cranberry Brie Bites with Puff Pastry

Make these simple, elegant brie bites for your next gathering. Flaky puff pastry holds creamy brie and sweet-tart cranberry sauce, creating a crowd-pleasing holiday finger food.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into small cubes
  • 1/2 cup whole berry cranberry sauce
  • 1 egg, beaten (for egg wash)
  • Optional: 1 tablespoon chopped pecans or walnuts

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin.
  2. Unfold the thawed puff pastry sheet onto a lightly floured surface. Use a round cookie cutter (about 3 inches in diameter) to cut out circles from the pastry. You should get about 9 to 12 circles.
  3. Gently press each pastry circle into the cups of the prepared muffin tin, forming a small cup shape.
  4. Place one cube of brie cheese into the bottom of each pastry cup.
  5. Top the brie with about 1 teaspoon of cranberry sauce. If using nuts, sprinkle a few chopped nuts over the cranberry sauce.
  6. Brush the edges of the exposed puff pastry lightly with the beaten egg wash.
  7. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed, and the cheese is melted and bubbly.
  8. Remove the brie bites from the oven and let them cool in the muffin tin for 5 minutes before carefully transferring them to a wire rack to cool slightly before serving warm.

Notes

  • If you prefer using crescent roll dough instead of puff pastry, use a biscuit cutter to cut squares and press them into the muffin tin cups. Adjust baking time slightly as crescent dough cooks faster.
  • You can prepare these brie bites ahead of time by assembling them completely (without baking) and storing them covered in the refrigerator for up to 4 hours. Add 2-3 minutes to the baking time if baking directly from the fridge.
  • For a different flavor, swap cranberry sauce for fig jam or a thin slice of apple.
