Make this easy Caprese salad recipe featuring ripe tomatoes, fresh mozzarella, and fragrant basil. It is a simple, colorful appetizer or light dinner ready in minutes.

Ingredients

  • 3 large ripe tomatoes, sliced
  • 1 pound fresh mozzarella cheese, sliced or small mozzarella pearls
  • 1 bunch fresh basil leaves
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar (for dressing)
  • 1 tablespoon brown sugar (for glaze)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the balsamic glaze: Combine the balsamic vinegar and brown sugar in a small saucepan over medium heat. Bring to a simmer, then reduce heat to low. Let it cook, stirring occasionally, for about 8 to 10 minutes, until the mixture thickens enough to coat the back of a spoon. Remove from heat and set aside to cool.
  2. Arrange the tomatoes and mozzarella slices on a serving platter, alternating them for color. If using mozzarella pearls, scatter them evenly over the tomatoes.
  3. Tuck fresh basil leaves between the tomato and mozzarella pieces.
  4. Drizzle the entire platter evenly with the extra virgin olive oil.
  5. Season the salad lightly with salt and freshly ground black pepper.
  6. Drizzle the cooled homemade balsamic glaze over the salad just before serving.
  7. Serve this easy Caprese salad immediately as a quick side dish or appetizer.

Notes

  • For the best flavor, use high-quality, fresh mozzarella, often labeled as ‘fresh mozzarella’ or ‘buffalo mozzarella’.
  • If you prefer a thinner dressing instead of a thick glaze, simply whisk the balsamic vinegar with the olive oil and skip the sugar and simmering step.
  • This salad works well with cherry tomatoes halved instead of slicing large tomatoes.
