  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 1/2 cups peeled, cored, and diced apples (like Granny Smith or Honeycrisp)
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined. Do not overmix.
  4. In a small bowl, combine the diced apples, brown sugar, and cinnamon for the swirl mixture.
  5. Pour half of the batter into the prepared loaf pan. Sprinkle half of the apple swirl mixture evenly over the batter. Pour the remaining batter over the apples, then top with the remaining apple swirl mixture. Gently swirl the top with a knife if desired.
  6. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  8. While the bread cools, prepare the glaze: Whisk together the powdered sugar and 1 tablespoon of milk or cream until smooth. Add more liquid, a drop at a time, if the glaze is too thick.
  9. Drizzle the glaze over the cooled apple bread before slicing and serving.
