  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 1/2 cup lager beer (like Yuengling or similar pale lager)
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)

Instructions

  1. Shred the sharp cheddar cheese if you did not buy it pre-shredded.
  2. Combine the shredded cheddar cheese, softened cream cheese, beer, garlic powder, smoked paprika, and cayenne pepper (if using) in a medium saucepan.
  3. Heat the mixture over medium-low heat, stirring constantly.
  4. Continue stirring until all the cheese is fully melted and the dip is smooth and velvety. Do not let it boil. This should take about 10 to 15 minutes.
  5. Remove from heat and serve immediately while warm.

Notes

  • For a variation, substitute half of the sharp cheddar with Gouda cheese for a slightly different flavor profile.
