Ingredients

Scale
  • 16 ounces cream cheese, softened
  • 8 ounces blue cheese, crumbled and divided
  • 1 cup sour cream
  • 3/4 cup finely chopped green olives (pimento removed)
  • 1/2 cup olive brine
  • 2 ounces gin or vodka (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Extra chopped olives and olive oil for garnish

Instructions

  1. In a large bowl, combine the softened cream cheese, half of the blue cheese, sour cream, chopped olives, olive brine, gin or vodka (if using), and garlic powder.
  2. Use an electric mixer or a sturdy spoon to beat the mixture until it is smooth and creamy. Scrape down the sides of the bowl as needed.
  3. Season the dip with salt and pepper to your preference. Remember the brine is salty.
  4. Transfer the dip to a serving bowl. Sprinkle the remaining blue cheese crumbles over the top.
  5. Garnish with a drizzle of olive oil and a few extra chopped olives.
  6. Chill the dip for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • You can prepare this dip up to 24 hours in advance. Keep it covered in the refrigerator until you are ready to serve.
  • Serve this savory crowd pleaser dip with sturdy crackers, pretzel crisps, celery sticks, or cucumber slices.
  • For an alcohol-free version, simply omit the gin or vodka. The olive brine provides the signature flavor.
