  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 tablespoon minced garlic
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts or thighs into the bottom of your slow cooker.
  2. Sprinkle the chicken evenly with salt, pepper, garlic powder, and Italian seasoning.
  3. Pour the chicken broth over the chicken. Add the chopped sun-dried tomatoes and minced garlic around the chicken.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is tender and cooked through.
  5. Remove the chicken from the slow cooker and shred it using two forks, or keep the pieces whole if preferred. Return the chicken to the slow cooker.
  6. In a small bowl, whisk together the heavy cream and Parmesan cheese. Pour this mixture into the slow cooker.
  7. In a separate small bowl, whisk together the cornstarch and cold water until smooth to create a slurry. Stir the slurry into the slow cooker mixture.
