Make the ultimate crowd-pleasing side dish with this easy, hands-off recipe for creamy crockpot cheesy potatoes. These slow cooker potatoes are perfect for potlucks, family dinners, and holidays, delivering gooey, tender results with minimal effort.

  • 32 ounce bag frozen shredded hash browns, thawed
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups shredded sharp cheddar cheese, divided

Instructions

  1. Lightly grease the inside of your slow cooker insert.
  2. Place the thawed shredded hash browns into the slow cooker.
  3. In a large bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, milk, onion powder, garlic powder, salt, and pepper until smooth.
  4. Pour the soup mixture evenly over the potatoes in the slow cooker and gently stir to combine everything.
  5. Stir in 2 cups of the shredded cheddar cheese into the potato mixture.
  6. Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the potatoes are tender.
  7. During the last 30 minutes of cooking, remove the lid and sprinkle the remaining 1 cup of cheddar cheese over the top.
  8. Replace the lid and allow the cheese to melt completely before serving.
  9. Stir gently before serving to redistribute the creamy sauce.

Notes

  • For a richer flavor, substitute the milk with heavy cream.
  • If you want a heartier meal, add 1 cup of sliced, cooked Kielbasa sausage when you stir in the first portion of cheese.
  • To make this a true ‘funeral potatoes slow cooker’ style, use cream of chicken soup and add 1/2 cup of crushed cornflakes mixed with 1 tablespoon of melted butter on top during the last 15 minutes of cooking.
