Easy Crock Pot Chicken and Stuffing Dinner

Prepare this comforting, hearty Crock Pot Chicken and Stuffing for a simple, set-it-and-forget-it weeknight meal. The slow cooker keeps the chicken tender while creating its own savory gravy.

Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 cup water or chicken broth
  • 1 (16 ounce) package dry stuffing mix (with seasoning packet)
  • 1 tablespoon butter, melted (optional, for topping)

Instructions

  1. Place the chicken pieces in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the cream of chicken soup, cream of celery soup, and water or broth until smooth. Pour this mixture evenly over the chicken.
  3. Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2.5 to 3 hours, until the chicken is cooked through and easily shreds.
  4. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir it into the soup mixture.
  5. Sprinkle the dry stuffing mix evenly over the top of the chicken and sauce mixture. Do not stir the stuffing in.
  6. Dot the top of the stuffing with small pieces of butter, if using.
  7. Cover the slow cooker and cook on LOW for an additional 30 to 45 minutes, or until the stuffing is heated through and fluffy. Do not lift the lid during this time to allow the steam to cook the stuffing properly.
  8. Serve immediately, scooping the creamy chicken mixture along with the fluffy stuffing topping.

Notes

  • For a less soggy stuffing texture, you can cook the chicken completely, shred it, and then stir the stuffing mix into the liquid base. Cook for 1 hour on HIGH, then serve the stuffing mixture alongside the chicken instead of layering it on top.
  • You can add a bag of frozen green beans or sliced carrots to the slow cooker when you add the chicken for a complete one pot chicken stuffing meal.
  • Use chicken thighs for extra moisture if you prefer dark meat.
