  • 2 large sweet potatoes, scrubbed and cut into 1/4-inch thick fries
  • 1 tablespoon olive oil
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Pinch of paprika

Instructions

  1. Soak the cut sweet potato fries in cold water for at least 30 minutes. This step removes excess starch and helps them crisp up.
  2. Drain the fries completely and pat them very dry using paper towels or a clean kitchen cloth. Moisture is the enemy of crispiness.
  3. In a medium bowl, toss the dry sweet potato fries with olive oil until lightly coated.
  4. Sprinkle the cornstarch, salt, pepper, garlic powder, and paprika over the fries. Toss again until the seasoning and cornstarch evenly coat every fry.
  5. Preheat your air fryer to 380°F (195°C).
  6. Place the seasoned fries in the air fryer basket in a single layer. Do not overcrowd the basket; work in batches if necessary.
  7. Air fry for 15 to 20 minutes, shaking the basket every 5 minutes, until the sweet potato fries are golden brown and crispy on the edges.
  8. Remove immediately and serve hot with your favorite dipping sauce.
