Instructions
Pat the chicken pieces dry with paper towels. In a medium bowl, toss the chicken with 2 tablespoons of the Cajun seasoning, salt, and pepper until evenly coated.
Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the seasoned chicken to the skillet in a single layer. Sear for 3 to 4 minutes per side until golden brown. Do not overcrowd the pan; cook in batches if necessary. Remove the chicken from the skillet and set aside.
