  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into bite-sized pieces
  • 1/2 cup heavy cream
  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup whole milk ricotta cheese, for topping
  • 1/4 cup grated Parmesan cheese, for topping

Instructions

  1. Heat the olive oil in a large Dutch oven or stockpot over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the crushed tomatoes, tomato sauce, chicken broth, oregano, basil, salt, and pepper. Stir to combine. Bring the mixture to a boil.
  4. Once boiling, add the broken lasagna noodles. Reduce the heat to medium-low, cover, and simmer for 12 to 15 minutes, stirring occasionally to prevent the noodles from sticking to the bottom, until the noodles are tender.
  5. Stir in the heavy cream and fresh spinach. Cook just until the spinach wilts, about 2 minutes. Do not let the soup boil after adding the cream.
  6. Taste the soup and adjust salt and pepper if needed.
  7. Ladle the hearty Italian soup into bowls. Top each serving with a dollop of ricotta cheese and a sprinkle of Parmesan cheese. Serve immediately with garlic bread for a complete family dinner.

Notes

  • For a richer flavor, substitute half of the chicken broth with beef broth.
  • If you prefer a milder flavor, use ground turkey instead of Italian sausage.
  • Break the lasagna noodles into pieces about 1 to 2 inches long before adding them to the pot.
  • This recipe is a great base for a slow cooker creamy soup; brown the meat and sauté the onions first, then add all other ingredients except the cream and spinach to the slow cooker and cook on low for 6 hours. Stir in the cream and spinach during the last 30 minutes.
