Ingredients
Scale
1 pound breakfast sausage (mild or spicy)
8 ounces cream cheese, softened
2 cups all-purpose baking mix (like Bisquick)
2 cups shredded sharp cheddar cheese
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper.
In a large bowl, combine the softened cream cheese and the breakfast sausage. Use your hands or a mixer to blend them thoroughly until they are fully incorporated.
Add the baking mix and the shredded cheddar cheese to the sausage mixture. Mix everything together until a uniform dough forms. Do not overmix.
Roll the dough into small, uniform balls, about 1 inch in diameter. Place the balls on the prepared baking sheet, leaving about 1 inch of space between them.
Bake for 18 to 22 minutes, or until the sausage balls are golden brown and cooked through.
Remove from the oven and let them cool slightly on the sheet before serving warm.
Notes
For an extra zesty flavor, drain one 10-ounce can of Rotel (diced tomatoes and green chilies) and mix it in with the other ingredients.
You can prepare the dough ahead of time, roll the balls, cover them, and refrigerate for up to 24 hours before baking. Add a few extra minutes to the baking time if baking directly from the refrigerator.
Serve these savory sausage bites with ranch dressing or honey mustard for dipping.
