Make these simple, sweet and savory cranberry brie bites using puff pastry. This recipe requires only five ingredients and bakes quickly, making it a perfect crowd-pleasing appetizer for holiday parties.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into small cubes
  • 1/2 cup cranberry sauce (whole berry or jellied)
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon chopped pecans or fresh rosemary (optional, for topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Unfold the thawed puff pastry sheet. Use a 2-inch round cookie cutter to cut out circles from the pastry. You should get about 12 to 16 circles.
  3. Place the pastry circles on the prepared baking sheet.
  4. Top each pastry circle with one small cube of brie cheese.
  5. Place about 1/2 teaspoon of cranberry sauce on top of the brie.
  6. If using, sprinkle a few chopped pecans or a tiny sprig of rosemary over the cranberry sauce.
  7. Brush the edges of the pastry circles lightly with the beaten egg wash.
  8. Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown and the brie is melted and gooey.
  9. Remove from the oven and let cool on the baking sheet for 2 minutes before transferring to a serving platter. Serve warm.

Notes

  • For make-ahead preparation, assemble the bites up to the egg wash step, cover them, and chill for up to 4 hours. Brush with egg wash and bake just before serving.
  • If you prefer a different pastry, you can substitute wonton wrappers for a thinner, crispier bite.
  • If you do not have pecans, chopped walnuts work well as an alternative topping.
