This Cowboy Caviar recipe is a vibrant, no-cook appetizer packed with beans, corn, and fresh vegetables. Tossed in a zesty lime dressing, it is perfect for game days, potlucks, or as a healthy side dish served with tortilla chips.

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 1/2 cups frozen or canned corn, thawed or drained
  • 1 cup chopped fresh tomatoes
  • 1 cup chopped bell pepper (any color)
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh lime juice
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Tortilla chips, for serving

Instructions

  1. Prepare all vegetables: chop the tomatoes, bell pepper, and red onion. Seed and mince the jalapeño if you are using it.
  2. In a large bowl, combine the rinsed and drained black beans, black-eyed peas, corn, tomatoes, bell pepper, red onion, cilantro, and jalapeño.
  3. In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper to create the zesty lime dressing.
  4. Pour the dressing over the bean and vegetable mixture. Gently toss everything together until all ingredients are evenly coated.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is important for the best flavor.
  6. Serve your Cowboy Caviar chilled or at room temperature with tortilla chips for dipping. You can also serve this as a Southwestern salad or side dish.

Notes

  • You can make this make ahead dip up to one day in advance; store it covered in the refrigerator.
  • For a richer flavor, use charred corn instead of plain corn.
  • If you prefer a tangier dressing, substitute 2 tablespoons of red wine vinegar for 2 tablespoons of the lime juice.
