Instructions

  1. Place the cottage cheese, shredded cheddar cheese, taco seasoning, and water into a high-speed blender.
  2. Blend on high until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed to ensure no lumps remain. This step is key to avoiding graininess.
  3. Pour the blended mixture into a microwave-safe bowl or small saucepan.
  4. Heat in the microwave in 30-second intervals, stirring well after each interval, until the queso is hot and fully melted (about 1 to 2 minutes total). If using a saucepan, heat over low heat, stirring constantly.
