Bake a loaf of homemade cottage cheese banana bread that uses cottage cheese for extra protein while keeping the texture fluffy and moist. This is a healthy twist on a classic comfort bake, perfect for breakfast or snacks.

  • 3 very ripe medium bananas, mashed
  • 1 cup (225g) cottage cheese, full-fat or low-fat
  • 2 large eggs
  • 1/4 cup (50g) melted coconut oil or butter
  • 1/2 cup (100g) packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (210g) all-purpose flour (or use gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, combine the mashed bananas, cottage cheese, eggs, melted oil or butter, brown sugar, and vanilla extract. Mix until just combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon, if using.
  4. Add the dry ingredients to the wet ingredients. Mix with a spatula until you just combine the batter. Do not overmix; a few streaks of flour are acceptable.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  7. Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely before slicing.

Notes

  • For an oatmeal banana bread mix, stir in 1/2 cup of rolled oats with the dry ingredients.
  • If you prefer a lower-fat banana bread idea, you can substitute the oil with applesauce, but the texture may be slightly less rich.
  • This recipe is excellent for meal prep; slice the cooled loaf and store portions in airtight containers.
  • For a richer flavor, use whole milk cottage cheese.
