Make your weekend mornings easier with this overnight Cinnamon Roll French Toast Casserole. This recipe combines the gooey sweetness of refrigerated cinnamon rolls with a rich, custardy French toast bake, ready to go into the oven when you wake up. It is an indulgent breakfast treat perfect for family gatherings or holiday brunches.

  • 1 (12.4 ounce) package refrigerated cinnamon rolls (about 8 rolls)
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 cup water
  • For the Glaze: 1/2 cup powdered sugar, 1 tablespoon milk, 1/2 teaspoon vanilla extract

Instructions

  1. Lightly grease a 9×13 inch baking dish.
  2. Arrange the refrigerated cinnamon rolls in a single layer in the prepared baking dish. If the rolls are very close together, you may cut them in half to fit better.
  3. In a medium bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and nutmeg until fully combined.
  4. In a separate small bowl, whisk together the granulated sugar and brown sugar.
  5. Pour the egg mixture evenly over the cinnamon rolls in the baking dish. Sprinkle the sugar mixture evenly over the top of the rolls and egg mixture.
  6. Cover the baking dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours, or preferably overnight.
  7. When ready to bake, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap or foil.
  8. Bake for 30 to 35 minutes, or until the casserole is puffed and golden brown in the center.
  9. While the casserole bakes, prepare the glaze. Whisk together the powdered sugar, 1 tablespoon of milk, and 1/2 teaspoon of vanilla extract until smooth. Add more milk, a drop at a time, if the glaze is too thick.
  10. Remove the casserole from the oven. Drizzle the cream cheese glaze evenly over the warm casserole.
  11. Cut into squares and serve immediately for a decadent breakfast treat.

Notes

  • Using refrigerated cinnamon rolls makes this an easy make ahead breakfast option for busy mornings.
  • For extra flavor, you can add 1/2 cup of chopped pecans or walnuts on top of the sugar layer before refrigerating.
  • If you are short on time, you can skip the overnight chill and bake immediately, though the custard may not soak in as deeply. Increase the bake time by 5-10 minutes if baking immediately.
