Ingredients
Scale
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
3/4 cup packed light brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups mashed ripe bananas (about 3 large)
1/2 cup milk or buttermilk
1 cup semi-sweet chocolate chips, plus extra for topping
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set this dry mixture aside.
In a large bowl, use an electric mixer to beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Add the mashed bananas and milk to the butter mixture. Mix on low speed until just combined. Do not overmix.
Gradually add the dry ingredients to the wet ingredients. Mix on low speed only until the flour streaks disappear.
Gently fold in 1 cup of chocolate chips using a spatula.
Pour the batter into the prepared loaf pan. Sprinkle extra chocolate chips over the top.
Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean or with moist crumbs attached.
Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.
Notes
Use very ripe bananas, those with significant brown or black spots, for the best flavor and moisture.
For an extra rich loaf, substitute buttermilk for regular milk.
If you prefer a fudgier texture, reduce the baking time slightly and check for doneness earlier.
This bread freezes well once cooled. Wrap tightly in plastic wrap and then foil.
