Make this flavorful, comforting Chicken Scampi served over rich, creamy Garlic Parmesan Rice. This easy skillet meal is perfect for weeknights but delivers gourmet taste.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 2 cups cooked white rice
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Add the minced garlic and red pepper flakes (if using) and cook for about 1 minute until fragrant. Do not let the garlic burn.
  4. Pour in the white wine or broth and lemon juice. Bring the mixture to a simmer and cook for 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream and bring the sauce back to a gentle simmer.
  6. Add the cooked rice to the skillet. Stir well to coat the rice with the sauce.
  7. Stir in the 1/2 cup of grated Parmesan cheese until the rice becomes creamy. Taste and adjust seasoning with salt and pepper.
  8. Return the cooked chicken to the skillet. Toss gently to coat the chicken in the sauce.
  9. Stir in the fresh parsley. Serve immediately with extra Parmesan cheese sprinkled on top.

Notes

  • For the creamiest rice, use freshly grated Parmesan cheese instead of pre-shredded.
  • If you prefer a richer scampi sauce, substitute the heavy cream with half-and-half.
