Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 1/2 cup diced water chestnuts, drained
  • 1/4 cup minced fresh mushrooms
  • 2 tablespoons minced fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions, divided
  • 1 head butter lettuce, leaves separated and washed
  • Optional: Chopped peanuts for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet and cook, breaking it up with a spoon, until it is fully browned. Drain off any excess grease.
  3. Add the water chestnuts, mushrooms, ginger, and garlic to the skillet. Cook for 3 to 5 minutes until the vegetables soften slightly.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, and black pepper to create the sauce.
  5. Pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly.
  6. Cook for 2 minutes, stirring constantly, until the sauce thickens slightly.
  7. Remove the skillet from the heat. Stir in half of the chopped green onions.
  8. Arrange the washed lettuce leaves on a serving platter.
  9. Spoon the savory ground chicken filling into the center of each lettuce cup.
  10. Garnish with the remaining green onions and optional chopped peanuts. Serve immediately.

Notes

  • For a low carb chicken lettuce cups option, skip adding brown sugar or substitute with a zero-calorie sweetener.
  • You can use shredded cooked chicken instead of ground chicken if you prefer.
  • Serve with extra hoisin sauce or a drizzle of sriracha for added heat.
