Make this easy, one-pan Cheesy Taco Potato Skillet for a quick weeknight dinner. It combines crispy potatoes with seasoned ground beef and melted cheese for comforting Tex-Mex flavor.

  • 4 cups diced potatoes (Russet or Yukon Gold)
  • 3 tablespoons olive oil
  • 1 pound lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (about 1 oz) taco seasoning
  • 1/2 cup water
  • 1 1/2 cups shredded cheddar cheese (or Mexican blend)
  • Salt and pepper to taste
  • Optional toppings: Sour cream, salsa, chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the diced potatoes with olive oil, salt, and pepper on a large baking sheet. Roast for 20 minutes until they start to become tender and lightly browned.
  2. While potatoes roast, cook the ground beef and diced onion in a large skillet over medium heat until the beef is browned. Drain any excess fat.
  3. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Stir in the taco seasoning packet and 1/2 cup of water. Bring the mixture to a simmer and cook for 3-5 minutes, allowing the sauce to thicken slightly.
  5. Remove the potatoes from the oven. Carefully transfer the seasoned beef mixture from the skillet onto the baking sheet with the potatoes, spreading it into an even layer.
  6. Sprinkle the shredded cheese evenly over the potato and beef mixture.
  7. Return the baking sheet to the oven and bake for another 5-10 minutes, or until the cheese is fully melted and bubbly.
  8. Remove from the oven. Serve immediately with your choice of taco toppings like sour cream, salsa, and green onions.
